I like butternut squash because is full of flavour,so when make the soup I just keep it very simple.
3.2 gloves of garlic
4.1-2 cups of chicken stock
5.pinch of salt
6.1 tbsp oil.
7.1 small butternut squash
Saute your onion for 2 minutes.
Add tomatoes & garlic and cook for 3 minutes.
Then add your butternut & chicken stock.
Cook till butternut can be poked by a fork.
Pour all content from your pan to a blender.
Blend until smooth.
Pour the contents from the blender back into the pan/pot.
