PUMPKIN BREAD

I love experimenting with different recipes & I like how this pumpkin bread turned out.

Ingredients:
3 1/2 cups flour ( I used 3 cups whole wheat flour & 1/2 cups all purpose flour)
1/2 cup sugar
3 eggs
2 tsp baking soda
1/2 tsp salt
2/3 cup of water
1/2 allspice/mixed spice
2 tsp cinnamon
2 tsp nutmeg
2 cups pumpkin puree/fresh pumpkin(grated)
1 cup vegetable oil

How to:
Preheat oven to 350 degrees.
In a large bowl mixing all the dry ingredients.
In a another bowl mix all the wet ingredients then add to the dry ingredients.
Fold in the pumpkin puree.
Grease your loaf tin/pan.
Bake your bread for 40-60 minutes. Check for doneness by making sure a toothpick/fork inserted comes out clean.

How to make pumpkin puree:
Preheat oven to 325 degrees.
Cut pumpkin in half & remove seeds and pulp.
Cover each half in foil.
Bake foil side up for 1 hour or until tender.
Scrape pumpkin meat & blend or mash with a fork.
