Mangoes are seasonal fruits so I like to find ways to preserve my favourite fruit & enjoy it while is out of season. One way of preserving mangoes is by making chutneys.I use my chutney as a soup thickener & marinade.
Chutney:A sweet or savory but usually spicy condiment made with a variety of fruits and/or vegetables.
You'll need;
Pinch of salt
1 cup water
1 tbsp oil(your choice)
2 tbsp apple cider vinegar
2 semi-ripe mangoes
1 sliced onion
ginger
garlic
cloves
>>In your pan add your oil & then add garlic.
>>Saute for a minute.
>>Add your onion,ginger,cloves & acv.
>>Cook for 2 minutes.
>>Add water & boil for 5 minutes.
>>Add salt & then add your mangoes.
>>Cook for 30- 45 minutes or to your desired thickens.
>>When your chutney has cooled store it in a glass jar/bottle & refrigerate.
