Chickpea Salad

I love love chickpeas.They are high in protein and fiber & perfect substitute for meat free days. I found a salad recipe & I had to try it. Will be sharing other chickpea recipes.

How to chickpea;
Soak chickpeas for 6-12 hours or overnight.
Boil for 30minutes to 1 hour.

You'll need;
1 cup of boiled chickpeas
1 avocado
1 tomato
A few leaves of baby Spinach
1 medium size onion
chia seeds (Optional)

1 tablespoon sunflower oil
1 teaspoon apple cider vinegar
Pinch of salt

Add chickpeas,avo,tomato,baby spinach,onion in a bowl & then dress it with oil,vinegar & salt. Then sprinkle chia seeds or your favourite seeds.
